Chocolate Oatmeal No Bake Cookies

Each batch was always slightly different from the previous.  It seems to be difficult to get the consistency the same each time.  What I have found over the years is that the amount of oats that are used seems to be the trick.

This Chocolate Oatmeal No Bake Cookies recipe is actually near and dear to my heart

Cook in 30 minutes
Serve 20

Ingredients
1 stick unsalted butter (Melted)
1 1/2 cups sugar
1/2 cup whole milk
1/3 cup cocoa
1 teaspoon pure vanilla extract
1/2 cup peanut butter
3 cups oatmeal (Quick-1 minute)

Instructions
In a large sauce pan on medium to medium high heat combine:

  1. Melted butter and Sugar - Mix with whisk.
  2. Add Whole Milk - Whisk until the mixture begins to heat and dissolves the sugar.
  3. Add Cocoa - Mix to incorporate.
  4. Heat mixture to a slow rolling boil making sure there are no lumps or sugar granules.
  5. Remove from heat and add in Vanilla Extract and Peanut Butter. Mix well.
  6. At this point it will be best to use a wooden spoon ----
  7. Add half portion of oats and mix to coat. Add remaining oats and mix well.
  8. Line an 18x26 cookie sheet with parchment paper.
  9. Using a tablespoon begin to shape clusters and place them onto the cookie sheet.
  10. Let cool for 15 minutes.
